Mrs. Hudson has her limits, and you can be no quicker to find them by invading her kitchen. Besides, I do not eat much as it is and am happy to subsist on sandwiches, leftovers, or going out to a restaurant.

[ ... Or eating the dish his Watson set aside for himself for later. Maybe Watson should employ that tactic to help Sherlock eat more regularly.

Regardless, the pull to experiment is too strong. Even if he learns how to do so properly, he'll want to try to find a better way or see what happens when he tries something else. And if he's allowed to use the pots and pans of the kitchen, they may end up finding their way into chemical experiments.

Heavily spiced dishes are easier to hide poisons, or allergens, in which might affect flavor. It need not be poison either. A sedative hidden in food or drink could lend itself to use in a criminal activity. The proportions of additive to food should also be considered because what if someone doesn't eat the entire meal? Would there be enough to cause the desired effect?

[ Again, reasons why Sherlock should not be allowed in the kitchen beyond making coffee for himself. He is not above testing a little pinch of the latest vegetable alkaloid out of a spirit of inquiry in order to have an accurate idea of the effects on himself or others.... ]
